Wild Rice, Beef & Curry Casserole
1-1/3 cup cooked wild rice
1 lb. ground beef, lean
1/2 cup butter
1 cup onion, chopped
1 cup red pepper, chopped
4 Tbsp. flour
1/2 tsp. salt
1/2 tsp. garlic powder
1/4 tsp. cayenne pepper
1-1/2 tsp. curry
2 cup milk
10 oz. mixed vegetables in butter sauce, thawed
1/2 cup sunflower seeds
Preheat oven to 325º F. In large skillet, brown beef; drain and set aside. Melt butter; sauté onions and red pepper. In small bowl, mix flour and seasonings; add to onion mixture. Cook stirring constantly until bubbly. Gradually stir in milk until creamy. Mix in beef, vegetables, wild rice and sunflower seeds. Pour into a 3 qt. casserole dish; bake uncovered 25 - 30 minutes. Serves 8 - 10.
